I’m gonna guess that you probably know someone who eats food. I’m also gonna guess that that person probably LIKES eating food. Seriously—the Instant Pot was by far the greatest purchase I made last year. This miracle device replaced both my rice cooker and my slow cooker, and it doesn’t take up much room at all. The Instant Pot is seriously fricken amazing. You can make tender, juicy baby back ribs in like 30 minutes or rock hard FROZEN chicken breasts in 40 minutes (without defrosting). I have to tell you: I’m a disgrace to my Asian heritage because I SUCK at cooking rice—especially brown rice—but this mother f*cker can make brown rice as soft and sticky as white rice in like 25 minutes. I’m not joking. I LOVE my instant pot, and if you have an ounce of respect for any malnourished coworker or friend who is basically about to drop dead from exhaustion, buying this thing for them could save their damn life.

Fluffy Greek Pita Bread with Cool & Creamy Tzatziki Recipe

Best Greek pita and tzatziki sauce recipe!

Holy crap. I did not realize how difficult it is to find pocketless pita bread in the grocery stores here in Hawaii. Seriously! I spent over 2 fricken hours, weaving in and out of the aisles of 4 different grocery stores, searching high and low, driving in circles and nearly crying my eyes out just to fulfill my craving for some damn pita bread.

But you know what?! Good! I’m glad I didn’t find it because I got to create my own badass homemade Greek pita and eat it hot and fresh and fluffy and puffy and pillowy and steamy and supple and piled to the heavens without any storebought bag trying to guilt me with calories counts. Hmph!

My friend, Kostis, from Greece coached me through my epic odyssey, and the result was the best pita bread and tzatziki recipes I’ve ever tried. So, I need to share this because it’s just too good to hide!

Easy Greek tzatziki and pocketless pita bread
Super easy and quick tzatziki & pita bread!

Cool, Creamy, and Hella Easy Tzatziki RecipeAbout 10-12 Servings

Ingredients:

  • 1 cucumber
  • 14 oz of Greek yogurt (I used the Fage brand)
  • 2.5 Tbs Olive Oil
  • 2 cloves of garlic
  • Salt (to taste)
  • Pepper (to taste)
  • Dried dill (for garnish)

Let’s Do This, Baby:

  1. Grate the cucumber into tiny bits and throw all of that good stuff into a colander or strainer.
  2. Hold the strainer over the sink and squeeze the crap out of it with your hands to remove the liquid.
  3. Peel your garlic & crush it like your ex’s heart.
  4. Now, basically put everything in a bowl and mix it together, slowly adding the salt and pepper to your tastes.
  5. Cover the bowl with plastic wrap. Then, let that baby chill in the refrigerator for at least 3 hours. When you’re ready to eat, sprinkle with dill.

Best Pocketless Pita Bread Recipe – About 7-8 Servings

Ingredients:

  • 2tsp active dry yeast
  • 1tsp sugar
  • 1tsp coarse salt
  • 1tsp finely chopped fresh thyme
  • 2/3 cup milk (room temperature)
  • 1/3 cup water (room temperature)
  • 2 ½ cups of flour
  • 1 Tbs olive oil

Do This Stuff:

  1. Combine yeast, sugar, water, and milk in a bowl. Let it sit for 5 minutes or until a bubbles form at the top. (If your milk & water is not room temperature, you may need to let it sit for longer. Watch a youtube music video. Pet your cat & wash your hands. Wait for the bubbles to form.)
  2. Add olive oil to the wet yeast mixture and stir it up good.
  3. In another bowl or your stand-up mixer (if you’re lazy like me), combine the flour, salt, and thyme. Mix it so that everything is well incorporated.
  4. Turn your mixer on to the lowest setting or stir slowly by hand. Pour the wet yeast mixture into the dry flour mixture in small batches, making sure everything mixes together well before adding each batch.
  5. Sprinkle a bit of flour onto your work surface and hands. Then, knead the dough for about 5 minutes or until it becomes smooth enough to where you feel like spanking it.
  6. Brush a bit of olive oil onto the sides and bottom of a clean bowl. Put your dough into that bowl and cover with a clean towel. (We like clean things here.) Let it rest for about 40 minutes or until it doubles in size.
  7. After 40 minutes (or 1 episode of Stranger Things), press on the dough to remove the air and cut into 7-8 equal pieces. Spread a bit of olive oil onto a cutting board or work surface with a napkin. Roll each piece into a ball, then use a rolling pin to roll each dough ball into a circle of about 6 inches in diameter.
  8. Place an unoiled pan over medium heat. Gently place your rolled out pita dough into the hot pan and cook for 1-2 minutes on each side or until little puffy bubbles begin to form.
  9. Enjoy with that beautiful tzatziki sauce!
